Quinoa with hemp seed pesto

This dish was so delicious and so easy, I had to share...

In the food processor make pesto with 1 bunch basil, 1 clove garlic, a cup of hemp seeds, salt to taste and olive oil until the mixture is wet enough to turn in the food processor.

Make the quinoa by boiling 1 part water 1 part quinoa for 15 minutes.
Serve the quinoa with pesto on top. You can add tofu or salmon if you like, but hemp seeds and quinoa have a complete balance of amino acids, so it is not necessary for nutrition.

Buckwheat Cereal

During my diet I cannot eat most grain, because I need to stay away from carbohydrates. But sometimes I just want a nice hot bowl of porridge... So I make buckwheat. If us actually a fruit, but cooks up like oatmeal. I make it with lots if cinnamon and almond milk.

Buckwheat is low in sugar, high in fiber, and helps your body regulate its sugar levels. Buckwheat is high in inosit which helps your body regulate sugar levels and metabolize fat. Buckwheat helps the liver process hormones and sugars as well as by providing b vitamins. This protects agains cancers such as breast cancer and other hormone dependent disorders.

Buckwheat helps circulation because it is high in magnesium, which aids the blood vessels to open and relax.

Buckwheat helps people like me as well as people with diabetes through the b vitamins that it provides which regulate sugar levels.

Oat flour pancakes

Coconut oil (2 Tab.spoons) into sifted Oat Flour, +a little baking powder/soda
Beat 2 eggs, add Buttermilk or (yogurt/milk)
+ a little vanilla (agave)
Thick batter like porridge.
Cook on griddle/frying pan in some coconut oil
I double decker or slather single with blyberry Yogurt/ berries/Agave

next, I make with Jalapeno, Garlic, Cilantro, Ha,ha Healthy

Home made pickles

The local biodynamic farmer gave me extra cucumbers so I made 8 jars of pickles!!
So easy.
I soaked the cucumbers in ice water.
I filled a large pot with water boiled it and sterilized all jars.
Then I cut up the cucumbers and placed cucumbers, a clove of garlic and a sprig of dill in each jar.
I brought 3/4 cup sea salt
6 cups vinegar
9 cups of water
To a boil until the salt was dissolved.
I poured the brine in the jars leaving 1/2" at the top.
Wiped down each lid and rim.
Sealed the jars.
And boiled the jars for 15 minutes.
Voila! Homemade pickles!!

eggs, greens and daffodils!

I had the lucky opportunity of purchasing some farm fresh eggs last week. So this week I cooked them up with some greens that were in season, straight from the farm!
The greens went great with the eggs
and the daffodils made me happy to get up and greet the day!

today was a wonderful Spring day...

My fiance and I rode bikes, and then dined outside...

The table was set for two, clothed in a beautiful weaving that we picked up in Costa Rica....


The lighting consisted of candles, Christmas lights, and a carved gourd that my fiance's parents picked up for us in Mexico


The meal consisted of fried sweet potatoes, lightly salted


and lots of greens from the barefoot farmer


I cooked them in some homemade hotsauce, and a little mango
