Oat flour pancakes

Coconut oil (2 Tab.spoons) into sifted Oat Flour, +a little baking powder/soda
Beat 2 eggs, add Buttermilk or (yogurt/milk)
+ a little vanilla (agave)
Thick batter like porridge.
Cook on griddle/frying pan in some coconut oil
I double decker or slather single with blyberry Yogurt/ berries/Agave

next, I make with Jalapeno, Garlic, Cilantro, Ha,ha Healthy

Home made pickles

The local biodynamic farmer gave me extra cucumbers so I made 8 jars of pickles!!
So easy.
I soaked the cucumbers in ice water.
I filled a large pot with water boiled it and sterilized all jars.
Then I cut up the cucumbers and placed cucumbers, a clove of garlic and a sprig of dill in each jar.
I brought 3/4 cup sea salt
6 cups vinegar
9 cups of water
To a boil until the salt was dissolved.
I poured the brine in the jars leaving 1/2" at the top.
Wiped down each lid and rim.
Sealed the jars.
And boiled the jars for 15 minutes.
Voila! Homemade pickles!!

eggs, greens and daffodils!

I had the lucky opportunity of purchasing some farm fresh eggs last week. So this week I cooked them up with some greens that were in season, straight from the farm!
The greens went great with the eggs
and the daffodils made me happy to get up and greet the day!

today was a wonderful Spring day...

My fiance and I rode bikes, and then dined outside...

The table was set for two, clothed in a beautiful weaving that we picked up in Costa Rica....


The lighting consisted of candles, Christmas lights, and a carved gourd that my fiance's parents picked up for us in Mexico


The meal consisted of fried sweet potatoes, lightly salted


and lots of greens from the barefoot farmer


I cooked them in some homemade hotsauce, and a little mango

Vegan pancakes

This past Saturday I woke up with a craving for some pancakes!!

Here's the recipe.. vegan and full of goodness!

ingredients:
1 1/2 cups brown rice flour
1/2 cup oat bran
1/2 cup flax meal
1 teaspoon baking soda
1/2 teaspoon fine sea salt
2 cups unsweetened almond milk
coconut oil for pan
1 cup berries

preparation:
mix dry ingredients
add almond milk and mix well
heat a skillet with some coconut oil
pour batter to desired size
add berries to center, press into the cakes
brown on either side
serve with warmed jam or maple syrup

the importance of organic

I tried sprouting 5 avocados from trader joes and none of them sprouted after several weeks.... could it be the dreaded bud nip!!!  


really explains a lot.

Lets all do our best to preserve our seeds, buy from local organic farms and support viable seeds in all of our fruits and vegetables. I would rather have viable seeds and buds than bud free fruits and vegetables.

cauliflower hashbrowns

Some of you may have noticed from my blog that I stay clear of almost all white food... It's true, this year I am on a healing diet and do not eat anything besides nutrient rich superfoods. But there are some white foods that deserve a little credit, and I will be providing more recipes for in the future. Today, cauliflower gets the glory. This morning, instead of hashbrowns made with potatoes, how about shredding up some cauliflower and making them? The recipe is simple:


ingredients:
1 head cauliflower
2 eggs
1/2 cup flax meal
1/2 teaspoon cayenne pepper1/2 teaspoon cumin
salt
coconut oil

preparation:
grate the cauliflower like you would potatoes. squeeze out any excess water. add the rest of the ingredients to the cauliflower and mix well. Heat the oil, and fry little cakes of the cauliflower until it is crispy on either side. Serve with greek yogurt or salsa.

Gardening





today was a beautiful spring day, so I decided that it was high time to show some respect for the nature spirits and tend the garden..


here are some of the beautiful blossoms that greated me on this glorious day!



Some of my bushes were shading my future vegetable garden, so I went ahead and trimmed them back





much of what I did today was clear away falls leaves to reveal the beautiful plants that were sprouting underneath



there were garlic and onions, as well as other unidentified sprouts from the compost that I had spread a few months ago



all of the leaves from the yard will eventually get composted. For now they stay in a pile because my composter is extra small!




looks like my strawberry plants survived the winter!

These truffles were developed because January 1, 2012 I went on a mostly vegan sugar free diet. ingredients:


1 cup organic raw cacao powder (from mountain rose herbs)
2 cups organic raw maca powder (from mountain rose herbs)
2 cups almond butter
2 tbsp vanilla extract
2 full droppers liquid stevia
1/2 can organic coconut milk

preparation:
In a bowl mix stevia and maca.
Add almond butter, vanilla and stevia and mix well. 
Add the coconut milk until the mixture gets wet enough to form balls. Best if mixed with your hands.
